Often called China's hamburger: chopped braised pork (or beef) stuffed into a crispy-on-the-outside, soft-inside baked flatbread with gravy.

Wide, belt-like hand-pulled noodles topped with sizzling chili oil, garlic, and soy. Named for the loud slapping sound the dough makes.

Sights in Xian

One of the world's greatest archaeological discoveries — over 8,000 life-sized warriors, horses, and chariots buried to guard China's first emperor, Qin Shi Huang. Each figure has unique facial features. Truly breathtaking in scale.

China's most complete ancient city wall, dating from the Ming Dynasty (1370). At 14km in circumference, it's wide enough to cycle on top, offering panoramic views of the old city on one side and modern Xi'an on the other.

A vibrant food street and neighborhood centered on one of China's oldest mosques (built 742 AD), uniquely blending Chinese temple architecture with Islamic function. The surrounding lanes offer Xi'an's best street food.

A 7-story Tang Dynasty pagoda built in 652 AD to house Buddhist scriptures brought from India by the monk Xuanzang. The adjacent north square has China's largest musical fountain show after dark.

One of China's top three museums, tracing Shaanxi's role as the cradle of Chinese civilization from prehistory through the Tang Dynasty's golden age. The Tang Dynasty mural gallery and gold artifacts are world-class.
